In this week’s People of Mougins, we wanted to tell you more about Ana Maria Cordido. Ana Maria is the Head Chef at Le Café des Amis.

Tell us about yourself

Hi, I’m Ana Maria, the head chef of Le Café des Amis at Mougins School. I’m from Venezuela and have spent most of my life travelling around the world before moving here to the Côte d’Azur with my family in 2017. Prior to moving to this region, I lived in Dubai for 10 years working in more traditional cuisine via five-star restaurants.

Tell us about your greatest professional achievement

When living and working in Dubai, I was the Head Chef of a restaurant at the Jumeirah Emirates Towers, a 5-Star Luxury hotel in the heart of Dubai. I worked hand-in-hand with the restaurant manager to develop a new concept restaurant in Dubai. I conceptualised and developed a new steakhouse based on the British steakhouse traditions. I was in charge of handling the team, the menu, the restaurant design, the guest experience and the overall atmosphere of the restaurant.

What is your steepest learning curve?

I've had the opportunity to work in a variety of settings as a result of my experiences living in different countries and experiencing diverse cultures. Working with coworkers who aren't always as open-minded and receptive to fresh ideas to solve the problem at hand has been one of my most difficult learning curves.

Mougins School is a great place because…

Of it’s international and open-minded community. I like working here because the community has entrusted me with creating menus for their children, and staff that are healthy, organic, diverse and fun to make. I enjoy coming to work everyday and creating the meals from scratch for the community to enjoy.

Do you have anything that you would like to share with the community

Here is a link to one of the many articles written about my involvement with the launch of the Rib Room Restaurant.
